Why cool nights are essential

As many people know, the Napa Valley is an ideal place to grow grapes because it enjoys hot days and cool nights. Why cool nights, you ask? Well, cool nights – specifically with temperatures in the low 50s F – are essential for shutting down the ripening process. Like people, grapes enjoy a little cooling off period in which to rest each evening. At lower temperatures, sugars stop developing and acid levels remain in balance.

If you are visiting Yountville in the summer time, bring a light sweater, and be thankful for that evening shift in temperature!
